Overview

This hotel is nestled among its own vineyards, incorporating a beautiful restaurant, wine tasting cellars, and the Hunter Valley's largest winery. During your stay, enjoy a comprehensive half hour tour of the winery, which takes guests through the entire winemaking process, from grape to wine. This is followed by a private wine tasting with compliments of the resort, where cellar master wines are presented, tasted, and then discussed.

Room Information

The hotel offers 35 guestrooms, spa cottages and a 2 bedroom cottage. All rooms are 4-star rated and include timber cathedral ceilings and private balcony with great views over the Wine Country. Guestrooms are single storey and include timber ceilings, direct-dial telephones, LCD flat-screen television and DVD player, hair dryers, reverse-cycle air conditioners, tea/coffee makers, mini bar, desk, clock radios, and private patios with views.

Things To Do

Winery Tour
Nowhere in the Hunter can you try so many wines – under the one roof. An exclusive range of premium wines from small Hunter Valley winemakers - including Andrew Thomas, David Hook, Andrew Margan, Ian Little, Polin & Polin, Stormy Ridge, San Martino, Wombat Crossing, Crisford Family, Gartelmann & Macquariedale Estate. Just to mention a few. Vineyard inspection, tutorial and tasting are included.

Hunter Valley Wine Theatre
Daily at 11am & 2pm. A short 15 minute visual presentation on the history of the Hunter, grape growing, harvesting, right through to the making of wine. Then, the Cellarmaster will take you through a structured tasting of 4 of the Hunter’s best wines.

Cooking Class
Join Executive Chef Phillip Collis and his team and experience the entertaining Hunter Valley Cooking School in their purpose built Cooking School Kitchen with Library. This is a hands on class and all dishes are cooked from scratch using local organic produce. Recipes are provided and the dishes cooked are eaten for either lunch or dinner. This lunch or dinner experience usually consists of a three course lunch with an additional course of Binnorie Cheese for the cheese factory opposite the resort.
